[FEB-5] Allow users to edit their email and verify usernames can be changed already

1. Re-factor the updateProfile route in our user directory in the backend, and allow emails to be updated as well. We want to allow this because the notification system will rely on this email when sending notifications to users outside of the app.
2. Please also verify that usernames can be safely edited/changed and reach out if this does not already work! (Ben & Jaren good contacts for this)
