Various upgrades to get things working locally on my M1 (old packages tend to fail to build from source on new arch; and esbuild didn't even distribute m1 builds in the version we were using).
Also, Node 14 was the previous min. version, but let's bump it closer to current LTS. Most changes here deal with documentation updates (many stale references to node 10, 12, 14)
