When nodes have more storage on a separate volume, we want to use it for containerd and kube storage:

After containerd config default > /etc/containerd/config.toml, in /var/lib/containerd/ change root to 'root = "/mnt/containerd/"'

systemctl stop kubelet
mkdir /mnt/k8s/kubelet/
cp -r /var/lib/kubelet/* /mnt/k8s/kubelet/
mv /var/lib/kubelet/ /var/lib/kubelet.bck
ln -s /mnt/k8s/kubelet /var/lib/kubelet
systemctl restart kubelet
