Update docs from Wiki for DRAM v2, probably move to readthedocs

The wiki is largely DRAM v1 focused. A lot of the science parts are still accurate, but the software parts/install instructions/database instructions will be out of date. Update them. Probably move to readthedocs since those can be autogenerated on merging, and can host multiple docs versions.
