Docker-Compose out of date and makes integration testing difficult #2247

What would you like to be added:

Update the .\build\docker-compose.yml file to ensure it meets current containers and environment options
Ensure the .\build.env file is configured and secrets swapped correctly in the docker-compose.yml file
Re-organise both files into alphabetical order, so make it easier to find various containers.

Why is this needed:

Allow contributors to the source code to run all the tests prior to PR's
Enable more secure docker container examples for software engineers to follow.
