Remove the Redshift-specific logic for enable_case_sensitive_identifier

Describe the feature

#63 needed to introduce logic related to enable_case_sensitive_identifier because the cluster use for CI testing had the default setting of false. But now it has the setting of true, so we might be able to remove the Redshift-specific portions of that PR.

We should make sure to document that the CI tests for this package require a cluster with enable_case_sensitive_identifier=true.
