[Docs] Console docs do not mention proxyConfig setting while it's still available

Sense had a doc page for configuration options, such as sense.proxyFilter and sense.proxyConfig. This page is missing in the Console docs, but according to #8711 at least proxyConfig is still available.

This config option is being deprecated by #9823 and it will now inherit the settings from the elasticsearch settings.

It might still be worthwhile to document that for the older versions though.

+1 on this. Just had a customer call today where they brought this up as an issue and it would have been nice to just send them a link.
