I'm trying to avoid us having to patch it over and over so I've opened:

https://salsa.debian.org/apt-team/python-apt/-/merge_requests/83

To allow to specify a UBUNTU_VERSION_CODENAME=foo in our os-release file.

After that, software-properties need a fix upstream to take this into account.
