Hello, i think there should be a documentation folder for payment methods with the following structure:

TEMPLATE FOR A LIST OF PAYMENTS PAGE: (inspired from bisq's payment methods page: https://bisq.wiki/Payment_methods)

example path: docs/payment-methods.md

Table columns: Payment Method, Region, Trading Period, Per-Trade limit ?, Risk Factor, Currencies, Popularity
Ranking: based on Popularity (attract the users attention where most trades occur)
Coloring: based on Risk Factor (do not recommend people to do face to face trades for instance)
Entries: Cash By Mail (national), Cash by mail (international), SEPA instant transfer, Amazon eGiftcards, Face-to-Face(F2F), etc

TEMPLATE FOR A PAYMENT METHOD:

Title: Cash By Mail (not International!)

Popularity: Very Popular/Popular/Uncommon/Rare
Risk Factor: Low/Medium/High
Currencies: {EUR,USD,everything else}
Region: {Europe, America, everywhere else}
Trading Period : 8 Days
How many trades of this type at once ? : from 1 to 10
Description: Sending cash by mail in exchange for Monero

Trade Protocol: (see https://localmonero.co/cash-by-mail-tips) for an example with the precautions

Feel free to correct me if something else needs to be added, or if something's not required. But i think the users need to be made aware of what are their payment options, which ones has least risk of going wrong, which ones are most popular, etc.
