Pizza sauce #145

Ingredients

  • 400g San Marsano tomatoes (some use passata others use can of tomatoes, a purist will say San Marsano tomatoes)
  • Seasoning salt, white pepper, and crushed black pepper
  • 1 tsp sugar
  • 2 or 3 garlic cloves, crushed or finely chopped
  • Fresh basil (leaves and stalks), finely chopped

Method

  1. Sauté garlic, fresh basil (and finely diced onion) in some olive oil until soft
  2. Add the tomatoes and the sugar (2 tsp)
  3. Use a potato masher or fork to crush the tomatoes (don't blend as the texture can become mousse-like)
  4. Simmer for 15-20 minutes until thickened.

Notes

  1. A splash of balsamic glaze is quite nice.

Ingredients

  • Makes enough sauce for 8 x 12” pizzas
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed or finely chopped
  • 800g canned whole plum tomatoes (we like San Marzano)
  • 2 heaped tsp sugar
  • 1 tsp salt
  • Handful of basil leaves, roughly chopped
  • Pinch of freshly ground black pepper

Method

  1. Place the oil in a pan over medium heat. When warm, add the garlic and fry until softened but not brown.
  2. Pour the can of plum tomatoes in the pan and use a masher or fork to crush them down.
  3. Add all the remaining ingredients, then simmer on a low heat for 20 minutes, or until the flavour has deepened and the sauce has thickened slightly.
  4. This sauce can be used straight away, or placed in an airtight container and stored in the fridge for up to a week, ready to be used as required.

Dominos Tomato Sauce Copycat Recipe (2)

Ingredients

  • 1⁄2 cup of canned tomatoes
  • 1 cup of tomato puree
  • 1⁄4 teaspoon of salt
  • A pinch of garlic powder
  • A pinch of oregano
  • A pinch of black pepper
  • A pinch of cayenne pepper
  • A pinch of dried basil

Method

  • In a small saucepan combine the tinned tomatoes and tomato puree and then heat over a medium heat.
  • Bring to simmer then mix in all other ingredients.
  • Keep simmering for 25-30 mins whilst occasionally stirring.
  • After 30 minutes pour the sauce into a pot or container then allow to cool. Allow to cool on the kitchen side and then move to the fridge so it’s ready to go when you make your pizza.
