Ingredients

To marinate:

  • Boneless skinless chicken breast - 1 lb
  • Salt - to taste (1.5 tsp)
  • Egg - 1
  • Italian seasoning - 1 tsp
  • Garlic paste(fine) - 1 tbsp
  • vinegar - 3 tbsp
  • chilly powder - 1 tbsp
  • pepper powder - 1/2 tsp
  • All purpose flour - 1 tbsp
  • Olive oil / butter - 1 tbsp

Others:

  • Bread Crumbs - 1 cup
  • (I powdered 3 slices of toasted dry bread to make the crumbs)
  • Oil / butter - 1 tsp
  • (to coat the baking foil)

Method

  1. Clean and wash the chicken breast. Pat dry. Cut it into 1.5 inch cubes.
    In a mixing bowl add salt , vinegar , Seasoning powder, pepper powder and chilly powder . Soak the chicken pieces and marinate for 4 - 6 hrs.
  2. In another bowl mix olive oil , egg and all purpose flour.
  3. Powder the bread pieces to get the crumbs. Place it on a wide plate.
  4. Preheat the oven to 400 deg F.
  5. Line a baking tray with an aluminum foil. Coat the aluminum foil with olive oil / butter .
  6. Dip the chicken in egg , flour mixture and roll it over the bread crumbs and place on the foil. Just like that place all the pieces on the tray.
  7. Bake for 20 minutes one side, flip and cook next 15-20 minutes on the other side (middle rack).
Being a big fan of Domino's chicken kickers , I never believed if I could make a similar one. Then I formulated my very own version to match...

A crispy chicken with a slightly spicy tang. Nutritional information is for 1oz.

Number of Servings: 16

Ingredients

  • Chicken Breast, no skin, 16 ounces
  • Albertsons Toasted Plain Bread Crumbs, 1 cup
  • Egg white, 2
  • Texas Pete Hot Sauce, 4 tsp
  • Garlic powder, 1 tbsp
  • Salt, 1 tsp
  • Poultry seasoning, .5 tsp

Method

  1. Preheat over to 375. Cut chicken into strips and then into about 1-1.5 inch pieces.
  2. In one bowl, mix the egg whites and hot sauce together.
  3. In a second bowl mix together the breadcrumbs, garlic powder, salt and poultry seasoning. Spray a roasting pan with nonstick spray.
  4. Drop six or eight pieces of chicken into the egg dip and stir them about to fully coat them.
  5. Allow them to sit for a minute and then coat them very well in the bread crumb mixture. (So this one at a time) When thoroughly coated, place in baking pan.
  6. Repeat with remaining chicken. After all chicken has been placed in the pan put in oven.
  7. Cook for about 12 minutes and then flip the chicken over and continue for another 12-15 minutes.

Here is a recipe for making homemade Chicken Kickers that are similar to Domino's:

Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1 inch strips
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Method

  1. In a shallow dish, mix together the flour, garlic powder, paprika, salt, and pepper.
  2. In a separate shallow dish, beat the eggs.
  3. In another shallow dish, place the panko breadcrumbs.
  4. Dip each chicken strip first into the flour mixture, then into the beaten eggs, and finally into the panko breadcrumbs.
  5. Repeat this process with all the chicken strips.
  6. In a large, deep saucepan, heat the vegetable oil over medium-high heat.
  7. Once the oil is hot, gently place the chicken strips into the oil, working in batches if necessary, and fry for about 3-4 minutes on each side, or until the chicken is golden brown and fully cooked through.
  8. Remove the chicken from the oil with a slotted spoon and drain on a paper towel-lined plate.
  9. Serve with your favorite dipping sauce.
  10. Enjoy your homemade Chicken Kickers!

Hey @jcallaghan! I love this, every time I get Domino's I order these. Have you made them yet, if yes, how was it? Is this last picture above self-made or original?

What I like particularly is the thickness and flavor of the breading layer:

I would love to learn how to do it, I would use it for breading everything! I'm quite an amateur in the kitchen though...
