- Total Time: 1 hour
- 2 flank steak
- Bacon, optional
- Fresh spinach
- 4 garlic cloves, crushed
- 2 tbsp olive oil
- 1 tbsp butter
- Seasoning, to taste
- Blue cheese, optional
- Parmesan cheese, grated, optional
- Tenderise and flatten the steak.
- If adding bacon, create a layer of bacon over the steak.
- Season and spread the crushed on both sides of the steak.
- Layer the spinach over the steak.
- If adding cheese, crumble the blue cheese over the across the spinach.
- Roll the steak and secure with toothpicks.
- Cut into 6 pinwheel slices.
- Heat a cast iron on medium to high heat.
- Add olive oil to the pan and sear the pinwheels for 2-3 minutes on each side.
- Place skillet with the steaks into the oven and cook for 7-10 minutes.
- Remove the toothpicks.
- Serve pinwheels with mash or rice and greens.
