This smokey slow cooker pulled chicken is a deliciously easy, minimal-fuss midweek meal. Simply get it on at lunchtime and look forward to a versatile supper in the evening. Pile it onto toasted brioche buns, layer it up in tacos with a tangy slaw or serve it on a bed of rice with your favourite veg.

Ingredients
1 tin 400g chopped tomatoes
100ml barbecue sauce
2 tsp chipotle paste
1 tsp apple cider vinegar
1 tsp sweet smoked paprika
1 tsp garlic granules
1 splash Worcestershire sauce
1 lime, zested and juiced
1 onion, thinly sliced
6 chicken thighs, skinless and boneless
1 tbsp coriander, chopped, for serving
1 tbsp crème fraîche
Method
In a bowl, mix together the chopped tomatoes, barbecue sauce, chipotle paste, vinegar, paprika, garlic granules, Worcestershire sauce and lime zest. Stir in the onion and chicken thighs and place the whole lot in a slow cooker for 4-6 hours, depending on how much time you have. Cook for 4 hours on a higher setting or for 6 hours on the lowest setting.
Shred the chicken with two forks (it should literally just fall apart), squeeze in the lime juice and serve with a sprinkle of fresh coriander and some crème fraiche, if you like.
