As per the documentation available here [https://www.kubeflow.org/docs/components/pipelines/v1/sdk/python-function-components/#selecting-or-building-a-container-image], if an image is not specified then the docker image for python 3.7 is picked up by default. Given python 3.7 is deprecated, the default image should be changed to higher version of python.
