Support multiple collections

Is your feature request related to a problem? Please describe.
It is not clear yet that we are decided on supporting only one collection. It makes sense to bake in multiple collections into the code and default them to work with only one collection. This will future proof the engineering work

Create collections as a set of collections and default to using only one collection
