Set up simplecov to track coverage

Right now, the coverage isn't that great. We should aim for increasing that, and one clear way of doing so is to start measuring it.

We should add simplecov as a dependency, and perhaps also report back the stats to Codeclimate: https://docs.codeclimate.com/docs/configuring-test-coverage
