Specifying the kernel to nbrmd allows for Binder to launch into the IRkernel without having to be manually set by the user
The nbrmd project got renamed to jupytext

Resolves #405
This PR will be WIP for a day or so while some issues are discussed and for the project maintainers to give early feedback. Once it is ready for review the WIP will be removed and someone will get tagged by me to request a review (in hopefully not an annoying manner).
