Options fix + doc updates

Options:
- Key bindings overwrote exising config file. I've updated the options menu that this doesn't happen anymore. This should stabilize how configs are saved/loaded.
- Updated volume sliders to match overall UI design.
- Updated the node structure in the Options menu a bit.

Documentation:
- Added statement about generative AI use.
- Added video tutorials that weren't added yet.
- Updated some bits here and there.
