Bump versions for zebrad 1.0.0-alpha.1 (#1646)

* Bump versions where appropriate Tested with cargo install --locked --path etc * Remove fixed panics from 'Known Issues' * Change to alpha release series in the README Co-authored-by: teor <[email protected]>
