feat: upgrade to Vitest 3 and update other dependencies

This pull request includes several updates to dependencies, formatting changes, and the addition of new files to the ignore list. Below are the most important changes grouped by theme:

Dependency Updates:

• Updated react, react-dom, and react-lazy-load-image-component dependencies in examples/UmbracoRichText/package.json to their latest versions.
