Upgrade to numpy 2.x

We noticed failing CI tests due to potentially breaking changes in numpy version 2.0, while working on, e.g., #11
It was fixed for the short-term by pinning to version numpy<2.0.

We should consider trying to remove the pin again and upgrade to the latest numpy (check if this can be done also backwards compatible to still support 1.x too)
