In the summer I introduced some PR checks to validate fields in the vscode-extensions.json file. This file is no longer being used, as we have switched to che-theia-plugins.yaml file.

Re-work the PR check to validate fields in the new file format.

Additionally, let's run a linter on the che-*.yaml files to prevent any formatting errors.
