docs: add description on blog post file/folder naming conventions and date extraction patterns

Provide a clearer explanation that Docusaurus supports many different file/folder naming strategy that users can adopt for date extraction while retaining flexibility in how the files and folders can be structured.

The addition to the documentation helps to emphasize the powerful date extraction options Docusaurus offers to make it easy for users to organize their blog posts.
