Personally, I would suggest to stick with a fixed jupyter book version. jupyter book is still at version 0.x and things change frequently. This can cause our book to become broken just because the usage of some jupyter book features changed.

This does not mean that we shouldn't update to a newer jb version from time to time, but let's do this intentionally and carefully and let's not change a working system, if there is no good reason to do so.
