Update datadog tracing plugin to v1.0.1

What this PR does / why we need it:
This updates the datadog tracing plugin to v1.0.1, containing a few improvements and fixes since the current version used in ingress-nginx.

Special notes for your reviewer:
Tested on a small k8s cluster after rebuilding the nginx and nginx-ingress-controller images.
