istio deployment stucked bug resolved (redhat-cop#4363)

* changes version of operators 

changed done like :  servicemeshoperator, kiali-operator, istio-workspace-operator

* Update the main.yml file with new operators ver

servicemesh were stucked due to new version of operator.  The elasticsearch-operator generated error

* update elastisticSearch version to stable
