"up to five fields (with only the first two required)"
While in fact all five are required by Snowplow and it's shown in the table below the aforementioned line.

Empty strings don't work with them either, so we had to resort to defaulting them to "default"

This function should only require the first two fields, has been fixed
so that everything else can be passed as ‘null’.
