This should be done after irods-docker and sodar-docker-compose updates have been finalized and we have successfully upgraded into v4.3 in production.

iRODS v4.2 compatibility will be left in at least for now, see #1592.

While doing #1922, I've temporarily set up a separate Postgres server in CI to enable tests pass with iRODS 4.2. Once I have a stable iRODS 4.3 image, I will be upgrading to that.

Upgraded to work on the current WIP version of our image, all tests in CI passing.

NOTE: I will keep this issue open until I can upgrade to the official 4.3.3-1 release of the image.

We now have a stable 4.3.3-1 of our iRODS image. I will upgrade the version in CI shortly.
