Run MEV on a 2000-validator Prater/Goerli node

Followup to #124

status-im/nimbus-eth2#3998 was fixed by status-im/nimbus-eth2#4040 so Nimbus's builder API support should scale as well as any other part now.

In exchange, it's reasonable to drop one of the two smaller nodes it's currently on, just to keep some configuration/diversity balance.
